Q: Would this withstand the heat inside a conservatory or melt allowing fixed items to fall off the interior plastic of a conservatory roof?

This stuff is notoriously hard to get off after setting. There is no chance it would melt. I once used some on a table leg that was broken at its fixing. Never again was I able to get that table leg off again.

Q: Can you use this to put pictures on a wall

Yes, but if have wallpaper the grip will only be as strong as the adhesion of the wallpaper to the wall. You also need to consider that you may want to remove the picture and this may prove difficult, possibly causing damage to the picture or the plaster. When it sticks it sticks. You might consider picture hooks etc. rather than have problems positioning or removing.

Q: Could I use this to glue a sign to an unpainted brick wall?

give the bricks a good clean and make sure there are no loose bits and it is dry, should work

Q: is it suitable for re attaching the bottle holding shelf to the fridge door

Yes but limited fix as would be constantly cole and not be suitable. Use plastic bond instead!
