Q: What’s the difference between curry paste & curry sauce in this series?

Hi and thanks for your question! The difference is merely that the sauces have the coconut milk added already and the pastes do not. Some people prefer to add their own coconut milk or coconut cream or sometimes almond milk... And some people prefer to have a ready to heat and eat curry sauce. Hope this helps. -Chef Mike

Hi there and thanks for your comment. Most of our Curry Pastes, as you point out correctly, do not contain any sugar. The reason we add a pinch of sugar to our Curry Sauces is that these are a "ready to eat" product, whereas the Curry Pastes can be adjusted with fish sauce, a pinch of sugar, whatever the customer likes. Because we are making our authentic curry sauces in Thailand we decided to add a tiny bit of sugar, as Thai Chefs do, to make the balance between salty, savory and sweet. We keep the sugar content to a bare minimum. And lastly, I agree with you 100% that sugar is addictive. I don't think it is necessary to eliminate all sugar though. My motto is "all things in moderation". I do not agree that growing organic cane sugar is terrible for the environment as there are zero pesticides, herbicides or fungicides used in growing the sugar cane.
