Makes a perfect cheese sauce.
I would say on its own, it can be a little dry, almost chalky texture. Grated on anything, it can pass for regular cheese no problem. Taste is exactly the same as mild cheddar. But melts beautifully no problem. Perfect for a creamy cheese sauce.
